Johnsonville Sausage, LLC
Warm Spinach and Sausage Salad
Recipe Yield: Serves 6
Ingredients:
18  Oz.  Johnsonville Maple Sausage Crumbles
3 3/4  Tbsp.  Olive Oil
1 1/2  Tsp.  Orange zest, grated
2 1/4  Tsp.  Fresh Orange Juice
9  Oz.  Baby Spinach
6  Each  Eggs
18  Each  Cherry tomatoes, cut in half
   Coarse Salt, to taste
   Fresh Ground Black Pepper, to taste
Instructions:
  1. In a large non stick sauté pan, warm the sausage over medium heat until crisp.
  2. Remove the sausage to a bowl with a slotted spoon and return the skillet to the stove.
  3. Add the olive oil, orange zest and the juice to the pan.
  4. Over medium-high heat, stir the mixture for about a minute. Remove the pan from the heat.
  5. Add the spinach and use tongs to coat the leaves with the dressing. Season the salad with salt and pepper.
  6. Divide the spinach evenly among 6 bowls and top with the crumbled sausage and cherry tomato halves.
  7. Top each salad with a fried or poached egg and serve.
