Warm Spinach and Sausage Salad

18 Oz.

Johnsonville Maple Sausage Crumbles |
|
3 3/4 Tbsp.
|
Olive Oil |
|
1 1/2 Tsp.
|
Orange zest, grated |
|
2 1/4 Tsp.
|
Fresh Orange Juice |
|
9 Oz.
|
Baby Spinach |
|
6 Each
|
Eggs |
|
18 Each
|
Cherry tomatoes, cut in half |
|
|
Coarse Salt, to taste |
|
|
Fresh Ground Black Pepper, to taste |

|
Instructions:
- In a large non stick sauté pan, warm the sausage over medium heat until crisp.
- Remove the sausage to a bowl with a slotted spoon and return the skillet to the stove.
- Add the olive oil, orange zest and the juice to the pan.
- Over medium-high heat, stir the mixture for about a minute.
Remove the pan from the heat.
- Add the spinach and use tongs to coat the leaves with the dressing. Season the salad with salt and pepper.
- Divide the spinach evenly among 6 bowls and top with the crumbled sausage and cherry tomato halves.
- Top each salad with a fried or poached egg and serve.
